The varieties used are Arrbequina, Sevillano, Frontero and Manzanilla. Extensive tasting trials were conducted so that the unique and best qualities or each variety are molded in to an aromatic, rich and fruity olive oil that is not attainable with single variety oils. It is my belief that a more complete sensory experience is achieved in this process similar to blending different grape varieties to produce a great wine.
